Easy Egg White Omelette Recipe

This easy egg white omelette recipe is the quickest healthy breakfast you can make — just 2 eggs, a little cheese, and your choice of meat, ready in under 2 minutes. Light, fluffy, and endlessly customizable.
Ingredients
- 2 eggs
- 2 tablespoons shredded cheese (cheddar, mozzarella, or your choice)
- 2 tablespoons cooked meat (diced ham, turkey, bacon, or sausage)
- Salt and pepper to taste
Instructions

1Crack each egg on a flat surface to open the shell cleanly. Hold the egg over a bowl and transfer the yolk between the two shell halves, letting the egg white fall into the bowl. Repeat with the second egg.

2Season the egg whites with salt and pepper and whisk until slightly frothy.

3Heat a small non-stick pan over medium heat and coat with cooking spray or butter.

4Pour in the egg whites. Let them set for about 30 seconds, then gently lift the edges with a spatula as they cook, letting uncooked egg flow underneath.

5When the eggs are almost fully set but still slightly glossy on top, add cheese and meat to one half.

6Fold the omelette over and slide onto a plate. Serve immediately.
💡 Improv Tip
Don't rush the fold — wait until the eggs are just barely set on top before you add the fillings. If you fold too early it gets messy. Add any vegetables you like: spinach, tomatoes, and mushrooms all work great here.
