Easy Crepe Recipe: Sweet Blueberry Stuffed Crepes

  1. 1Combine eggs and milk and whisk together or mix with a standing mixer until completely combined in a large bowl
  2. 2Whisk in flour a little bit at a time so it doesn't clump together. Should be a nice smooth texture.
  3. 3Heat a nonstick frying pan or iron skillet on medium-high heat. Grease the bottom of the pan with a little bit of the butter or oil making sure you coat the bottom and have extra for other crepes.
  4. 4Scoop out about 1/4 cup of the batter at a time and pour directly onto frying pan tilting to completely coat the surface of the pan. This recipe will yield about 10 crepes.
  5. 5Cook each crepe for about a minute of each side until you get a golden brown color.
  6. 6Sprinkle 1 tbs of sugar in a bowl of blueberries to bring out the sweetness
  7. 7Grab a handful of blueberries and place in the middle of the freshly cooked crepes
  8. 8Fold each end of the crepe into the middle to create a square shape and fry on fold side down to make a crispy brown seal.
  9. 9Flip the folded crepe and cook the other side as well to a crispy brown color.
  10. 10Serve hot.
