2 pieces of whole grain bread
2 avocados
2 tbs basil pesto
2 tbs chopped spinach
4 cherry tomatoes, sliced in half
salt and pepper to taste

Instructions

1Toast bread to desired crispness
2Cut avocados in half, removing seeds and scooping out each half in a bowl
3Add pesto and spinach and mix together
4Spread avocado mixture on toast and top with cherry tomatoes
